Chocolate pudding is such a classic dessert. But most chocolate pudding recipes require quite a bit of work. And they also contain milk, which I want to avoid.

This keto-friendly recipe solves both issues. It is dairy-free, and it's very easy to make. And the best part? It's delicious and super-rich. No one will believe that this fantastic dessert has so few ingredients!

Lindt 90% Chocolate

Perfect Keto Chocolate Pudding

You'll only need three ingredients to make this keto chocolate autumn pudding. Here's a summary of what you'll need:

Extra dark chocolate: I use Lindt 90% cacao. But you can also use whatever chocolate you like, but make sure it's high-quality. Unmistakably, the darker, the better. But sometimes I use Lindt 70%, and then I drop the sweetener.

Unsweetened canned coconut milk: Please make sure it's well-blended and also make sure it's full-fat. The reduced-fat is not so good, both in terms of flavor and texture.

Sweetener: I like to use stevia glycerite. You can also use a granulated sweetener if you want. It's best to use a powdered sweetener for a smooth texture.

Instructions to make Keto Chocolate autumn Pudding

It's so easy! These are the necessary steps.

Heat all the ingredients over medium heat until the chocolate melts. I think you could use the microwave – but if you do, do it in a few 30-second sessions, stirring after each session.

Remove the mix from the heat and whisk it until it's smooth. I use a hand whisk. No need for any fancy equipment!

Divide the mix between ramekins and chill for about two hours (but preferably longer) before serving.

It's lovely all on its own, and that's how I usually serve it. Just in case you want to be fancy, here are a few exciting options for you:

  • Top the chocolate pudding with keto whipped cream as I do in the video below, or with chocolate whipped cream.
  • Top it with fresh berries.
  • Spread dark chocolate shavings or a few dark chocolate chips on top.
  • Heat a teaspoon of peanut butter and sprinkle it on top.
  • Soften a square of extra-dark chocolate and drizzle it on top.

I do enjoy the fact that this is a chocolate dessert that I can make well in advance. It makes life so much simpler when you don't have to worry about making chocolate dessert when your guests are already there.

You SHOULD make this keto chocolate autumn pudding ahead of time and refrigerate for at least two hours before serving. Remember, two hours is the bare minimum – four hours is better, and overnight is best. 

This chocolate autumn pudding's consistency dramatically improves after a night in the fridge. It becomes silkier and thicker.

You can keep leftovers of this delicious keto chocolate autumn pudding, covered and refrigerated, for up to four days. However, I must say I never have leftovers when I make this fantastic dessert!
