- 4 cups or 328 g Chopped, Peeled Eggplant
- 1/4 cup or 0.25 g Truvia
- 3 tablespoons (3 tablespoons) Butter3
- 1/2 teaspoon (0.5 teaspoons) Xanthan Gum
- 2-3 teaspoons (2 teaspoons) Apple Pie Spice
- 1/2-3/4 cup (125 g) Water
- 1/2 cup (30 g) Whipped Cream
How To Make Keto Autumn Apple Pie
Peel the eggplant and chop it into all into small dices.
Then add stevia, butter, eggplant, and 1/2 cup of water in a 10-inch saucepan.
Cover the saucepan and cook everything until the eggplant is cooked through around 5 minutes.
Add in the tasty apple pie spice and xanthan gum and stir. Add 1/4 cup of additional water if you need it. Then allow everything to cook and thicken for an extra additional 1-2 minutes.
Finally, serve this keto autumn apple pie with whipped cream and do not treat the whipped cream as optional in this recipe.
Tips and Tricks for Making keto autumn Apple pie, don't use apples!
Cut the eggplant into small dices. The smaller the pieces, the easier it is to think they are real apples.
You may need to add some water depending on how dry/moist your eggplant is. Then cover and let the eggplant cook until it's mushy and done.
And if your eggplant is old and has seeds, you can remove them. I used younger eggplants and did not need to de-seed.
Note; be sure to absolute peel the eggplant.
Add some apple pie spice if you taste any eggplant flavor at all.
DO NOT SKIP THE WHIPPED CREAM. The whipped cream makes a huge difference to this recipe.
