Who Doesn’t Love a Keto Fudge Bar?
And have you like me been searching for a soft and scoopable keto-friendly ice cream? I have too for the past two years, but no luck so far until now.
They all are too rock hard and icy. I have had some success with using Xylitol in my ice creams, but that doesn’t always work well.
And there are problems with gas and tummy discomfort. Also, there is a real danger to animals if ingested.
Healthy Keto Chocolate Fudge Pops.
- 1 cup heavy cream
- 1 cup almond milk unsweetened or water
- 1/3 cup unsweetened cocoa powder
- 1/3 cup low carb sweetener like Lakanto Monkfruit Sweetener
- 1/4 tsp xanthan gum
- 1 teaspoon vanilla extract
Note that there are different flavor variations on this original chocolate fudge pops.
If you want to change it up a little bit, change the vanilla extract for whatever flavor your like (mint, coconut, banana, etc.). See the measurements in the notes.
Use a saucepan over medium heat and add cream, sweetener, almond milk, and cocoa powder. Whisk everything together to a smooth consistency.
Then bring it to a quick boil and then turn down immediately. And keep your chocolatey mixture at a steady simmer for a few minutes or until the mixture starts to get thicker.
After that, you should remove the saucepan from the heat and stir in the vanilla extract of your choice.
Then youWith a wire whisk in one hand and your tsp of xanthan gum, on the other hand, start mixing the chocolate mixture.
While whisking the delicious chocolate liquid sprinkle in xanthan gum and thoroughly incorporate into the chocolate liquid. Xanthan gum tends to clump if you dump it into your mixture, …and you don’t want that.
Set aside saucepan to cool on the counter for at least 10 mins but preferably to sufficiently cold. Transfer the chocolate liquid into a container to pour into your fudgy molds quickly.
Emit the chocolate liquid into each of your 8-10 popsicle molds. Cover and place the wooden popsicle stick in each frame. Be sure to cover with foil before you place the wooden sticks if your frame doesn’t come with a cover then stick the rods through the foil to hold them in place).
If you don't have a popsicle mold at home, it is perfectly fine to use little paper dixie cups. Sometimes this is preferable as you tear away the paper when you are ready to eat.
Freeze your tasty popsicles for 12-24 hours. Longer freeze time is more beneficial to make sure they are fully formed.
When you are ready to enjoy a pop, set your silicone popsicle mold out on the counter for some minutes, pry the popsicle, you want it out of the frame, and a bit away from the sides to loosen the individual popsicle.
Then while you are pulling up on the wooden stick, press up from the bottom to dislodge your keto treat.
This part can be difficult, but keep pressing up from the bottom of the mold while pulling up on the wooden stick.
As the thawing starts within seconds, the pops treat will slide from the frame.
